in the kitchen for gameday: herb roasted wings
I'm kinda obsessed with wings. It's not a secret- I think I could eat them for dinner every night, and a lot of nights I have.
With the big game this weekend I thought it would be appropriate to share one of my favorite wing recipes.
Herb Roasted Wings
- 2lb chicken wings
- 3 tsp salt
- 2 tsp ground black pepper
- 1 tsp chopped rosemary
- 2 tsp fresh thyme
- 1 tsp chopped basil
- extra virgin olive oil
Heat oven to 450 degrees. In a small bowl combine the salt, pepper, rosemary, thyme and basil. Drizzle wings with olive oil and toss with the salt mix. Cover a large cookie sheet with tin foil and spray lightly with a cooking spray (I use Trader Joe's Coconut Oil Spray.) Place wings onto baking sheet and roast for about 20min turning the wings over halfway through. (Leave the wings in longer if you'd like them more crispy.)
I serve the wings with a classic arugula and bacon vinaigrette salad (similar to this one.) I love how the peppery salad cuts the crispy wings. (I'll probably get grief for serving wings with salad-oh well.)
